Michael recently attended a kitchen design and planning course at the University of West London, adding to his GNVQ in 3D Design and his Degree in Spatial Design.
It involved looking at the academic approach to commercial kitchen design, and he was required to demonstrate a critical understanding of a variety of food production systems used in the hospitality industry. This included a la carte dining, banqueting and large scale contract catering.
He also had a tour of the kitchen at The Dorchester, and met Chris Galvin at Galvin’s in Baker Street.
