I was lucky enough to go on a cruise for a few days and was expecting good food – but blimey, the Gala Buffet, blew me away.  Alex Saxon – the head chef of the Balmoral and his team put on a display good enough for entry into a Salon Culinaire competition.  Many times I’ve admired such expertise, but not often had the chance to eat it!!!  I have to say it was as yummy as it looked.

Alex was kind enough to let me take a look at the kitchens and they were surprisingly compact for a galley serving 1300 guests and 700 staff.  Chef was keen to update his kitchen and I was happy to offer him advice

Perhaps one day we’ll be taking to the high seas; it would certainly be a challenge  – as Alex explained they have only a 6 hour turnround time between cruises and any new kit HAS to be fitted commissioned and working by sail away!
